These fudgy brownie cookies are a chocolate dream all year round. But we like them even better at Christmas. They also make a perfect gift in a nice cookie tin.
1. Melt chocolate together with the rapeseed oil in a water bath. Meanwhile, heat up the Joya drink and sugar in a small pot (do not boil) until the sugar has melted and then mix with the melted chocolate.
2. Fold in the flour, cocoa powder, baking powder and salt and mix to form a dough.
3. Scoop a tablespoon of the dough onto the baking tray, shape the dough into a ball and press it lightly to create large balls. Repeat with the remaining dough, leaving enough space between the cookies.
4. Bake in a preheated oven at 175°C for 9 minutes, let cool and enjoy or store in a cookie tin.
120g dark chocolate (70%)
50 ml rapeseed oil
140g baking sugar
80 ml Joya 3.5% drink
130g wheat flour
30g cocoa powder
1 pinch of salt
