Carrot Cake with Vanilla Frosting

A sweet cake with vegetables? Don't worry, you won’t taste the carrots in this carrot cake, but they provide a soft, juicy texture. There are lots of recipes for carrot cake, but this version is particularly spongy thanks to the Almond Rice Drink. And the frosting is a must!

    For the dough

    • 250 g wheat flour
    • 1 g baking powder
    • 1 tsp baking soda
    • 1 tsp salt
    • 1 tsp cinnamon
    • 1 tsp ginger
    • 2 piece/s eggs
    • 100 g white sugar
    • 100 g brown sugar
    • 1 tsp vanilla extract
    • 350 ml peanut oil
    • 450 g carrots
    • 80 g walnuts
    • 2 tbsp margarine
    • 300 ml Joya Almond Rice Drink

    For the vanilla frosting

    • 100 g margarine
    • 100 g icing sugar
    • 1 tsp vanilla extract
    • 3 tbsp Joya Almond Rice Drink

    Instructions

    1. Preheat the oven to 170°C.  Mix all the dry ingredients in a large bowl: Flour, wholegrain flour, baking powder, baking soda, salt, cinnamon and ground ginger.
    2. Beat the eggs with the sugar for approx. 4 minutes in a food processor or blender until the mixture is white and frothy. Add the Joya Almond Rice Drink, vanilla and peanut oil.
    3. Now add the dry ingredients to the egg mixture and stir. Gradually add the grated carrots and chopped nuts. Gently mix and pour into a greased springform or small cake tin.
    4. Bake for 50 - 55 minutes (approx. 20 minutes for a small tin), then allow the carrot cake to cool and remove from the tin.
    5. For the vanilla frosting, beat the margarine until it is very soft using a blender. Slowly add the sugar, vanilla extract and Joya Almond Rice Drink. Keep mixing until the frosting is creamy and smooth.
    6. Finally, spread the frosting on top of the completely cooled cake and chill in the fridge for one hour.

    For a vegan carrot cake, simply replace the eggs with plant-based alternatives e.g. apple sauce.
