Cauliflower Bechamel Pasta

It has a funny-sounding name, but this white vegetable is great for cramming a bit more veg into your daily dishes. And it's especially delicious in a creamy sauce to go with your favorite pasta!

  • 1 piece/s onion
  • 1 piece/s cauliflower
  • 4 tbsp olive oil
  • 2 tbsp thyme
  • 1 pinch Salt & Pepper
  • 2 tbsp lemon zest
  • 3 tbsp yeast flakes
  • 400 g spaghetti
  • 250 ml Joya Organic Soya Cuisine


  • 2 tbsp olive oil
  • 6 tbsp breadcrumbs
  • 3 tbsp yeast flakes
  • 1 tbsp thyme
  • 1 pinch salt


  1. Peel and finely chop the onions. Chop the cauliflower into small pieces as well. 
  2. Heat the olive oil in a large pan on a medium/high heat, then add the onion and cauliflower. 
  3. Remove the stalks from the thyme and add to the pan with a generous pinch of salt and pepper. Keep stirring until the cauliflower is soft. 
  4. Then add the Dream & Joya Organic Soya Cuisine, cover the pan, and leave to simmer. 
  5. Meanwhile, cook the pasta according to the packet instructions until it's al dente. 
  6. Strain, but keep back about 200ml of the pasta water. 
  7. Add the pasta water, yeast flakes and lemon zest to the pan with the cauliflower and stir well. Keep adding a little pasta water until the cauliflower has almost disintegrated. Make sure that the sauce doesn't become too thin. 
  8. To finish, fold in the pasta. 
  9. For the topping, brown the breadcrumbs, yeast flakes and thyme with salt in some olive oil until golden-brown.
  10. Plate up and serve.
