  • 250 g Joya Organic Tofu Smoked
  • 3 tbsp rapeseed oil
  • 2 piece/s avocados
  • 1 piece/s lemon
  • 8 piece/s rice paper
  • 1 handful arugula
  • 8 tbsp sprouts
  • 8 piece/s coriander
  • 0.5 piece/s lemon (juice)
  • 4 piece/s mini cucumbers

Peanut sauce

  • 2 tbsp peanut butter
  • 2 tbsp soy sauce
  • 0.5 piece/s lemon (juice)
  • 1 tsp sesame oil, toasted

Instructions

  1. Wrap the tofu in kitchen paper, place onto a plate and weigh down with a heavy object so that the tofu expels as much liquid as possible. Set aside for 15 minutes. 
  2. Meanwhile, peel and core the avocados. Slice the avocado and cucumber into long strips and drizzle with lemon juice. 
  3. Mix all the ingredients for the peanut sauce well; if need be, thin the mixture by adding a little water. 
  4. Heat the rapeseed oil in a pan on a high heat. Slice the tofu into long strips and then fry in the oil on both sides until crispy.
  5. Fill a large, shallow bowl with water. Briefly soften the rice paper and put it on a plate. 
  6. Fill the middle of the rice paper with 1/4 avocado, half a cucumber, 1/8 of the tofu, 1 sprig of coriander, 1 tbsp of sprouts and a bit of arugula. Turn up the bottom of the rice paper and roll it together from left to right. Repeat with the remaining ingredients. 
  7. Serve your rice paper wraps with the peanut sauce and enjoy!
