Grilled Cucumber & Corn Salad with Oat Dressing

When the summer sun is blazing in the sky and the veggie burgers are on the grill, you know it's time for a refreshing barbecue salad!

  • 2 piece/s cobs of corn
  • 6 piece/s mini cucumbers
  • 2 handful arugula
  • 4 piece/s sprigs of dill
  • 4 tbsp sunflower seeds
  • 2 tbsp olive oil
  • 1 pinch Salt & Pepper

Dressing

  • 4 tbsp Dream & Joya Oat with Yogurt Cultures Natural
  • 1 tbsp olive oil
  • 0.5 piece/s juice of lemon
  • 1 pinch Salt & Pepper
  • 2 piece/s sprigs dill, chopped

Instructions

  1. Wash the corn cobs thoroughly and then rub with olive oil and salt. Fry in a pan (or grill) until the corn is done: around 10 minutes. 
  2. Finely chop the dill, rinse the cucumbers and cut into long, thin strips. Put into a bowl together with the arugula and sunflower seeds. 
  3. Cut the corn off the cob and add to the bowl too – mix everything well. 
  4. For the dressing, mix all the ingredients well.
  5. Serve the salad on four plates, drizzle with your delicious dressing, and season with salt and pepper.
