Vegan Vanilla Crescents

It simply wouldn’t be Christmas without the classic Vanilla Crescents! The traditional Austrian Christmas cookie tastes great, even without butter!

For rolling

  • 50 g powdered sugar
  • 1 pack/s Bourbon vanilla powder

For the dough

  • 250 g spelt flour
  • 200 g vegan margarine
  • 80 g icing sugar
  • 100 g finely chopped walnuts
  • 1 pack/s Bourbon vanilla powder
  • 50 ml Joya Almond Drink


  1. To make the Vanilla Crescents, mix the flour, sugar, and finely chopped walnuts in a large bowl. Add the margarine and the Joya Almond Drink and knead into a smooth dough.
  2. Wrap the dough in transparent film or seal in an airtight container and leave to rest in the fridge for about two hours. The dough can also be left to rest overnight.
  3. Preheat the oven to 170ºC (convection oven).
  4. Divide the dough into four or five equally large pieces and shape them into rolls. These should have a diameter of about 1.5 cm.
  5. Now it’s time to roll the Crescents! Cut the large rolls into smaller pieces and shape them into crescents. Work as quickly as you can so that the dough doesn’t become too warm and therefore harder to work with.
  6. Place the Vanilla Crescents onto a lined baking tray and bake for about 15 minutes.
  7. Mix the vanilla powder and powdered sugar in a soup dish or flat dish and lightly roll the Vanilla Crescents in the mixture while they’re still warm.

The Vanilla Crescents will keep in a cookie jar for a few weeks.
